Project description:
Guaranteeing food safety is essential throughout the value chain of a meat product. From farm to slaughterhouse is a critical point, where the risk of fecal contamination is very high. Good management, good evisceration and cleaning of the carcass can reduce the level of microorganisms in the product. Having and improving risk control and prevention techniques in slaughterhouses is essential.
Aim:
The objective of the project is to industrially investigate a solution that allows obtaining a carcass classification model with fecal contamination based on image analysis to improve the evaluation process of carcasses in slaughterhouses.
