Prospective study of markets demanding food products with added value associated with clean labels

DESCRIPTION AND OBJECTIVES.
It is intended to develop products called “clean label” or clean labels and seek alternatives to the use of some additives, such as sulfites in the wine sector, fruit preserves and meat products. For this, a review of the market situation was carried out in relation to the type of food studied and the interest they have for consumers, as well as the expectations for the immediate future.

RESULTS OBTAINED.
The review carried out found that the most observed purchasing trends refer to products with certain terms included in the labeled list (natural, free of, organic, without). Clean Label products or clean labels, therefore, continue to appear among the main factors involved in the choice to purchase food products
