DESCRIPTION AND OBJECTIVES.
The objective of this project is to assess the feasibility of an R&D project to find alternatives to the use of sulfites in the wine and canned fruit sectors. For this, a study of the state of the art was carried out on the use of alternatives to sulfites in R&D projects in the scientific literature (databases, monographs, dissemination results…)
After the analysis, the available alternatives were evaluated.

RESULTS OBTAINED.
Various more or less viable alternatives, which will require their application in product samples to assess their adaptation to the participating companies.
